Our Air Dried Lamb can be used in many ways, as a starter, main course, canapé, or just a snack. Why not try it as an accompaniment to salads, or with avocado.

Why not have it as canapé on crispy bread with a little butter or wrapped around a slice of pear with a mint leaf; delicious! Below are a few serving suggestions to tickle your taste buds.
Air Dried Lamb Risotto
Great stirred in to a risotto 5min before the end of cooking to give it a truly unique flavour. Our air dried lamb trimmings and end pieces finely chopped would be ideal to use.
Raclette with Air Dried Lamb
A fantastic accompaniment to the traditional Swiss raclette dish, consisting of potatoes and melted cheese. The finely sliced air dried lamb could be served as part of a meat platter or on its own. Gherkins and pickled onions also go very nicely with this.
Air Dried Lamb with Parmesan Cheese
An attractive starter that will treat your taste buds. Lay two or three thin slices of the air dried lamb on a plate, lightly drizzle the meat with a good quality olive oil and then sparingly sprinkle with freshly grated Parmesam shavings.
Kentish Fry Up
Ingredients: one egg, some air dried lamb trimmings,grated cheese, left over roast or boiled potatoes, chopped pepper and onions (or any other veg you fancy).
Start by frying the vegetable and potatoes, then fry the egg, adding the trimmings just after the egg. Sprinkle the grated cheese over the potatoes just before serving.
Air Dried Lamb Salad
Great to add to your favourite salad. Flavours that really compliment the lamb are rocket, sun dried tomatoes, olives, balsamic vinegar, figs.The best salad dressings to use with the lamb are sweet ones. Be creative and have a mixed green salad with either slices of air dried lamb, or mix in some trimmings.
